Influence of temperature, pH and NaCl concentration on the maximal growth rate of Brochothrix thermosphacta and a bioprotective bacteria Lactococcus piscium CNCM I-4031 ArchiMer

The maximum specific growth rate (μmax) of Brochothrix thermosphacta, a spoilage bacteria of cooked peeled shrimp, and Lactococcus piscium CNCM I-4031, a bioprotective strain, was investigated under different conditions of temperature, NaCl concentrations and pH. The basic modelling approach used was the Gamma concept (γ-concept) and the model developed was then adapted to shrimp. Cardinal growth parameters were quite similar for the two strains, except for NaCl. No NaCl was required for growth and the NaClmax was three-times higher for B. thermosphacta than for L. piscium (62 and 23 g l−1 respectively). Kinetic study of solid phase demineralization by weak acids in one-step enzymatic bio-refinery of shrimp cuticles ArchiMer

We describe a one-step bio-refinery process for shrimp composites by-products. Its originality lies in a simple rapid (6 h) biotechnological cuticle fragmentation process that recovers all major compounds (chitins, peptides and minerals in particular calcium). The process consists of a controlled exogenous enzymatic proteolysis in a food-grade acidic medium allowing chitin purification (solid phase), and recovery of peptides and minerals (liquid phase). At a pH of between 3.5 and 4, protease activity is effective, and peptides are preserved. Alginates being depolymerized during their alkaline extraction, reducing extraction time could help producing higher rheological quality alginates. The purpose of the present work is to study fresh Laminaria digitata destructuration during alkaline extraction and its link to extraction kinetics. Both alginate extraction yield and mean diameter of algae particles were followed for different values of agitation level and initial size of algae pieces. L'objectif général de l'étude est de simuler les épisodes de contamination de certains bivalves (huîtres et moules) par les toxines d'Alexandrium minutum et A. calenella à partir d'un module expérimental adapté, et en vue de construire un modèle de contamination applicable à ces espèces. Ce modèle sera ensuite susceptible d'être couplé aux modèles biologiques locaux (estuaire de Penzé et étang de Thau) de déterminisme des blooms, ainsi qu'aux modèles hydrodynamiques développés par différentes équipes (Ifremer, Université de Montpellier). La première année (2001-2002) était consacrée à la simulation des contaminations en estuaire de Penzé (Alexandrium minulum) et au développement de cultures en masse d'A. calenella de Thau en bioréacteurs.

Modelling of paralytic shellfish toxin biotransformations in the course of Crassostrea gigas detoxification kinetics ArchiMer

The aim of this study was to evaluate the importance of biotransformation of paralytic shellfish toxins during the detoxification process in contaminated oysters. Mathematical models based upon the detoxification patterns of digestive gland and other tissues were developed. It was demonstrated that biotransformations do not seem to play an important role in digestive gland or other tissue detoxification kinetics with our data set. Moreover, different toxin transfers from digestive gland toward other tissues were investigated. No significant transfer was highlighted in our data set. Modelling the accumulation of PSP toxins in Thau Lagoon oysters (Crassostrea gigas) from trials using mixed cultures of Alexandrium catenella and Thalassiosira weissflogii ArchiMer

Numerical and experimental study of a continuous electrostatic smoking process ArchiMer

The smoking process is a batch one with long duration processing (some hours). Deposition of smoke particles can be enhanced by electrostatic precipitation. However, a better knowledge of the fundamental physics is needed to optimize the process. We carried out experimental and numerical studies to obtain essential information on the smoke flow. First, experiments physically characterized the wood smoke. These measures lead us to study the turbulent two-phase flow using an algebraic slip model. The main coupling with electrical forces is taken into account through the slip velocity. Odor Modification in Salmon Hydrolysates Using the Maillard Reaction ArchiMer

The aim of this work was to study the effect of adding sugar during proteolysis to promote the Maillard reaction and mask the initial fish odor and off-flavors generated. An experimental design, based on the Doehlert plan, was used to study the influence of hydrolysis conditions (time, temperature, sugar, and antioxidant addition) on the odor characteristics of hydrolysates, soluble protein levels, and amino acid content. Results showed that the lowest level of sugar (10g of D-xylose added to 1kg of by-products) was enough to develop a grilled odor in hydrolysates. Optimizing conditions for the continuous culture of Isochrysis affinis galbana relevant to commercial hatcheries ArchiMer

Optimal culture conditions were investigated for the continuous culture of Isochrysis affinis galbana (T-Iso) by assessing the effects of irradiance, temperature, pH and nitrogen and phosphorus requirements. Assessment of the growth rate-irradiance relationship in a turbidostat experiment highlighted that an optimum irradiance efficiency for growth (E-mu) occurred at irradiance much lower than the saturating level. Furthermore, our modeling approach for productivity pointed out that an optimal set of irradiance and dilution rate could be achieved in order to maximize irradiance efficiency. Transient initial phase in continuous culture of Isochrysis galbana affinis Tahiti ArchiMer

To use salmon protein hydrolysates as food ingredients and to mask the fish odor, Maillard reactions were associated with enzymatic production of hydrolysates. The study explored an original approach based on regression trees (RT) and random forest (RF) methodologies to predict hydrolysate odor profiles from volatile compounds.
